Delicious Sweet Potato Scones

At our house, making plant food taste delicious, and feel satisfying....even like a TREAT is one of our main gigs!

Here's a recipe we found that my kids LOVE, as you can see in the video.  Scroll down for the recipe.

The Recipe from CookItUpPaleo.com:

1 cup cooked and mashed sweet potato
2 green tipped bananas
1/4 cup coconut oil
1/4 cup maple syrup
1/3 cup coconut flour
1 cup large coconut flakes
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp sea salt
1/3 cup arrowroot starch
1/3 cup raisins

Preheat oven to 350.
Mash the banana, sweet potato, maple syrup and coconut oil.
Add coconut flour, coconut flakes, arrowroot starch, and cinnamon.
Mix in the raisins.
Stir in baking soda, salt.
Spread dough 3/4" think on a parchment lined baking sheet. Score into scone shapes and bake for 40 min. Enjoy!
